Ingredients:
2 cups fresh blueberries, raspberries, strawberries and sliced bananas, mixed
 2 cups plain or vanilla yogurt
 1/4 cup white sugar
 8 small paper cups
 8 popsicle sticks

Directions:
Place the mixed blueberries, raspberries, strawberries, sliced bananas, yogurt, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.
Fill paper cups 3/4 full with fruit mixture. Cover the top of each cup with a strip of aluminum foil. Poke a popsicle stick through the center of the foil on each cup.
Place the cups in the freezer for at least 5 hours. To serve, remove foil and peel off the paper cup.

Ingredients:
2 cups gingersnap cookie crumbs
 2 tablespoons white sugar
 5 tablespoons melted butter
 1 (.25 ounce) envelope unflavored gelatin
 2/3 cup lime juice
 2 1/2 cups heavy cream, divided
 9 ounces white chocolate, chopped
 3 (8 ounce) packages cream cheese, softened
 1 cup white sugar
 2 tablespoons grated lime zest

Directions:
Combine cookie crumbs and sugar in a large bowl. Pour in melted butter, and mix thoroughly. Press into the bottom and one inch up the sides of a 10-inch springform pan.
Sprinkle the gelatin over the lime juice in a small bowl, and set aside to soften. Bring 1/2 cup of whipping cream to a simmer in a heavy pan. Remove from heat, and pour over the chopped white chocolate. Let soften for two minutes, then whisk until smooth. Mix the gelatin into the warmed chocolate until melted; set aside to cool to room temperature. Beat remaining 2 cups of cream to stiff peaks in a large bowl, and set aside.
Beat the cream cheese with the sugar with an electric mixer until well blended. Slowly blend white chocolate mixture into cream cheese, then mix in lime zest. Fold the whipped cream into the cream cheese mixture, and pour into prepared crust. Cover pan with plastic wrap, and refrigerate overnight.

Ingredients:
3 cups all-purpose flour
 1/4 cup white sugar
 4 teaspoons baking powder
 3/4 teaspoon cream of tartar
 1 cup butter
 2/3 cup heavy cream
 1 egg, beaten
 3 cups sliced fresh strawberries
 3 tablespoons white sugar

Directions:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix flour, 1/4 cup sugar, baking powder and cream of tartar. Cut in butter with pastry blender or two knives. Stir in cream and egg. Turn out onto a lightly floured surface and knead 2 minutes. Press into a half-inch thick sheet. Cut into squares. Place on baking sheets.
Bake in preheated oven 20 minutes, or until golden. Sprinkle 3 tablespoons sugar over sliced berries.
Let shortcakes cool before splitting and filling with sugared berries.

Ingredients:
1 lemon, zested and juiced
 1 lemon, juiced
 2 cups cold milk, chilled
 1 (14 ounce) can nonfat sweetened condensed milk, chilled

Directions:
In the freezer canister of an ice cream maker, combine lemon zest, lemon juice, milk and sweetened condensed milk. Freeze according to manufacturers' directions.

Ingredients:
8 fresh peaches - peeled, pitted and sliced into thin wedges
 1/4 cup white sugar
 1/4 cup brown sugar
 1/4 teaspoon ground cinnamon
 1/8 teaspoon ground nutmeg
 1 teaspoon fresh lemon juice
 2 teaspoons cornstarch
 1 cup all-purpose flour
 1/4 cup white sugar
 1/4 cup brown sugar
 1 teaspoon baking powder
 1/2 teaspoon salt
 6 tablespoons unsalted butter, chilled and cut into small pieces
 1/4 cup boiling water
MIX TOGETHER:
 3 tablespoons white sugar
 1 teaspoon ground cinnamon

Directions:
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.
