Ingredients:
1 (15 ounce) can pear halves
 2 cups vanilla yogurt
 1/3 cup white sugar
 1/2 teaspoon ground cinnamon
 1/4 teaspoon ground allspice

Directions:
Drain pears, reserving 1/2 cup of juice. Puree pears in food processor or blender.
Combine pears, reserved juice, yogurt, sugar, cinnamon and allspice in canister of ice cream maker. Freeze according to manufacturers' directions.

Ingredients:
2 1/2 cups all-purpose flour
 2 cups white sugar
 3/4 cup unsweetened cocoa powder
 5 eggs
 1 teaspoon vanilla extract
 1 teaspoon baking soda
 1/2 teaspoon salt
 1 cup blanched slivered almonds

Directions:
Preheat the oven to 350 degrees F (180 degrees C).
In a large bowl, combine all the ingredients except the almonds; mix well with a spoon. Stir in the almonds until well blended; the dough will be thick and sticky.
Place half of the dough on a 10 x 15 inch rimmed cookie sheet that has been coated with nonstick baking spray. Form a slightly rounded 4 x 12 inch loaf that is about 3/4 inch thick. Repeat with the remaining dough on a second cookie sheet and bake for 30 minutes.
Remove from the oven and reduce the temperature to 325 degrees F (170 degrees C). Allow the loaves to cool for 20 to 25 minutes, then cut into 1/2 inch thick slices. Lay the slices cut side down on the cookie sheets and bake for 15 more minutes. Turn the cookies over and bake another 15 minutes or until very crisp. Allow to cool, then store in an airtight container. Will keep several weeks.

Ingredients:
2 pounds ripe strawberries, hulled and halved
 1/3 cup white sugar, or to taste
 1 cup water
 1/2 teaspoon lemon juice (optional)
 1/4 teaspoon balsamic vinegar (optional)
 1 tiny pinch salt

Directions:
Rinse strawberries with cold water; let drain. Transfer berries to a blender and add sugar, water, lemon juice, balsamic vinegar, and salt.
Pulse several times to get the mixture moving, then blend until smooth, about 1 minute. Pour into a large baking dish. Puree should only be about 3/8 inch deep in the dish.
Place dish uncovered in the freezer until mixture barely begins to freeze around the edges, about 45 minutes. Mixture will still be slushy in the center.
Lightly stir the crystals from the edge of the granita mixture into the center, using a fork, and mix thoroughly. Close freezer and chill until granita is nearly frozen, 30 to 40 more minutes. Mix lightly with a fork as before, scraping the crystals loose. Repeat freezing and stirring with the fork 3 to 4 times until the granita is light, crystals are separate, and granita looks dry and fluffy.
Portion granita into small serving bowls to serve.

1 cup cake flour
 1 1/2 cups white sugar
 12 egg whites
 1 1/2 teaspoons vanilla extract
 1 1/2 teaspoons cream of tartar
 1/2 teaspoon salt

Directions:
Preheat the oven to 375 degrees F (190 degrees C). Be sure that your 10 inch tube pan is clean and dry. Any amount of oil or residue could deflate the egg whites. Sift together the flour, and 3/4 cup of the sugar, set aside.
In a large bowl, whip the egg whites along with the vanilla, cream of tartar and salt, to medium stiff peaks. Gradually add the remaining sugar while continuing to whip to stiff peaks. When the egg white mixture has reached its maximum volume, fold in the sifted ingredients gradually, one third at a time. Do not overmix. Put the batter into the tube pan.
Bake for 40 to 45 minutes in the preheated oven, until the cake springs back when touched. Balance the tube pan upside down on the top of a bottle, to prevent decompression while cooling. When cool, run a knife around the edge of the pan and invert onto a plate.

Ingredients:
1 cup white sugar
 1/4 cup cornstarch
 1 egg, beaten
 1 (12 fluid ounce) can evaporated milk
 1 1/2 cups milk
 2 teaspoons vanilla extract
 1 (12 ounce) package vanilla wafers
 4 banana, sliced

Directions:
In a saucepan over medium heat, combine the sugar, cornstarch, egg, evaporated milk and regular milk. Mix together well and stir until thick. Remove from heat; add vanilla and mix well.
In a large bowl or casserole dish, arrange a layer of cookies. Pour pudding mixture over cookies and top with a layer of sliced bananas. Refrigerate until chilled.

Ingredients:
3 egg whites
 6 tablespoons superfine (castor) sugar
 1 cup finely ground almonds
 1 1/2 teaspoons finely ground almonds
 1 1/3 cups confectioners' sugar

Directions:
Preheat oven to 320 degrees F (160 degrees C). Line baking sheets with parchment paper or a silicon mat.
Whisk egg whites in a clean metal mixing bowl until thick, about 5 minutes; whisk the superfine sugar into the egg whites until thick, glossy, and the mixture holds stiff peaks, 5 to 8 more minutes. Place a sieve over the bowl containing egg whites and sieve both amounts of almond meal and confectioners' sugar into the egg white mixture. Gently fold the almond meal and confectioners' sugar into the egg whites, retaining as much air as possible.
Separate the meringue into separate bowls to flavor and color, if desired. Spoon the meringue into a piping bag fitted with a 3/8-inch tip. Pipe 1-inch disks of meringue onto the prepared baking sheets, leaving about 2 inches between cookies.
Let the cookies stand at room temperature for about 15 minutes to form a thin skin. Pick up the baking sheets and let drop from several inches above the work surface to adhere cookies to the baking sheets.
Bake in the preheated oven until tops are dry, about 15 minutes; let cool completely on the baking sheets before peeling off the parchment paper.
