Mango Trifle with Candied Macadamias:
Ingredients:
1 cup pure cream
1 tsp vanilla extract
1/2 cup caster sugar
1/2 cup water
6 savoiardi biscuitsCandied Macadamias:
1/4 cup macadamias
1/4 cup caster sugar
1 mango, peeled and sliced
Method:
Use electric beaters to beat the cream, vanilla and two tablespoons of the sugar to firm peaks.
Combine the remaining sugar and the water in a small saucepan over high heat and boil to reduce to syrup. Break the savoiardi biscuits into large pieces and cover with the syrup to soak for several minutes.
For the candied macadamias, combine the macadamias and sugar in a pan over high heat for 3-5 minutes or until the sugar caramelises to a light golden. Pour the toffee and macadamias onto a baking tray lined with greaseproof paper. Leave to cool.
In two glasses, layer the whipped cream, mango and savoiardi biscuits. Top each trifle with candied macadamias.
Date Roll with Almonds and Citrus:
Ingredients:
12 dates, pitted and halved
1 cup Tilda microwave brown rice
Handful mint, chopped
1 orange, zested, peeled and diced
2 Tbs cream cheese
1/4 cup flaked almonds, plus extra to serve
Sliced orange to serve
Honey to serve
Method:
Lay the halved dates close together between two sheets of greaseproof paper. Use a rolling pin to roll flat and almost transparent. Ensuring no holes form between the dates to gain a thin sheet of dates.
Microwave the rice as per packet instructions.
Combine and mix the rice, mint, orange zest, diced orange, cream cheese and flaked almonds.
Place the rice mix onto the date sheet, roll over to enclose and remove the greaseproof paper. With a wet knife, remove the ends and slice the date roll in half.
Serve the date roll with orange slices and topped with almonds and honey.
